For centuries, wheat has been a kitchen staple for many families worldwide. William Davis explains in his book ‘Wheat Belly’ the significant differences of today’s wheat to what was available decades ago and its association with many diseases, obesity and mental health problems, as well as the many positive benefits of removing it from our diets.
Unfortunately, farming is concentrated mostly around profit over product, the more crops harvested, the more money in their pocket. However, this has changed the way wheat is engineered, meaning it is in fact, not even the same as the wheat that was produced pre twentieth century but still goes by the same name.
